Organic matcha tea

Matcha was born in China, not Japan. Under the Song dynasty, between the 10th and 13th centuries, tea was ground into powder and whisked in bowls; in the late 12th century the monk Eisai took the custom to Japan, where it grew into the tea ceremony. Our organic matcha comes from China. A few weeks before harvest the plants are covered to shade them, which deepens their green colour and umami flavour. The leaves are then steamed, dried, stripped of stems and veins, and stone-ground into an ultra-fine powder.
